Barley Tabouli

Barley is the lowest GI grain and can be used to replace rice or pasta to keep blood sugar levels stable and keep moods stable.  The combination of nuts and barley provide good quality protein, supplying both the building blocks for feel good neurotransmitters and the carbohydratess the brain prefers as a fuel.

Ingredients

200g pearl barley
1 cinnamon stick
2 cups flat leaf parsley, finely chopped
2-3 ripe tomatoes, chopped
1⁄2 spanish onion, finely chopped
10 raw whole almonds with skin
1 lemon, juiced
1⁄2 tblspn extra virgin olive oil
1⁄2 tblspn flaxseed oil
Celtic sea salt & freshly ground pepper

Method

1. Put barley in saucepan, with cinnamon and cover with water. Bring to the boil & cook for 20-30mins or until tender. Allow to cool.

2. Preheat oven to 180 for 10mins. Place almonds on tray and dry roast for 10mins, then roughly chop.

3. Add barley to a bowl with parsley, tomatoes and spanish onion. Mix together. Add in oils, lemon juice and salt and pepper. Mix together well.

Tabouli can be eaten by itself or top with your choice of grilled chicken, fish or lean meat.
