Fresh Tuna Stir-fry with Rocket, Basil & Pepper
Serves 2-3
Ingredients
250g tuna, cut into 2-3cm cubes
1 tspn extra virgin olive oil
1 clove garlic, finely chopped
1 TBSP lemon juice
1 TBSP fresh oregano, chopped
1 brown onion, sliced
1 large zucchini, sliced
1/3 red pepper, sliced
1/8c lemon juice
1 clove garlic, finely chopped
1 tspn salt-reduced tamari or Braggs all purpose seasoning
1 tspn mirin
1 TBSP chopped basil
Bunch of rocket
1 tspn pine nuts
Method
1. Combine olive oil, lemon juice, oregano and garlic in a glass or ceramic bowl. Add the tuna chunks and leave to marinate while you cut the vegetables.
2. Lightly spray a wok with olive oil. Add a tablespoon of water and cook marinated tuna quickly in batches, browning on a couple of sides, then remove.
3. Add onions, zucchini and red pepper, then stir fry for a few minutes. Add back tuna, extra juice, tamari, mirin and garlic.
4. Take off the heat and stir through basil & rocket just before serving. Serve sprinkled with pine nuts.
Note: You can replace rocket with baby spinach leaves or serve on a bed of lettuce. For a more filling meal, serve on rice or quinoa.
